Cabernet Sauvignon is one of the world's most widely recognized red wine grape varieties. It is grown in nearly every major wine
producing country among a diverse spectrum of climates from Canada's Okanagan Valley to Lebanon's Beqaa Valley to our favorite region El Dorado County California. Cabernet Sauvignon became internationally recognized through its prominence in Bordeaux wines where it is often blended with Merlot and Cabernet Franc. The classic profile of Cabernet Sauvignon tends to be full-bodied wines with high tannins and noticeable acidity that contributes to the wine's aging potential.
The Jodar Estate Cabernet vines were planted in 1987 on the slopes of the California Sierra Foothills. Starting with the first vintage the 1991 Jodar Estate Cabernet Sauvignons have been adorned with a steady procession of awards from major competitions, including best of region and best of class. Try this one and you will see why. Harvested and sorted by hand the grapes are crushed, undergo fermentation and are pressed into tanks. After three months they are racked into barrels with 35% French and American Oak. Three years in the barrel give this wine the rich smooth texture it is famous for.

Perfect for the most discerning guests at your table, Cabernet Sauvignon is not meant for light and delicate dishes. Instead you want dishes overflowing in protein and fat to tame the tannins, and mesh with all of rich flavours of the wine. Serve with steaks, hearty beef stews, pot roasts or something hearty from the grill. Perfect with select dark and rich sauces like a dark mushroom sauce, red wine reductions, or a hearty peppercorn sauce.
